It really depends on the construction of the guitar - when the top bellies, it can lead to loose braces, a popped bridge (had that one happen), etc. On the other hand, I kinda like a bit of belly on an older guitar - I wish I could say it definitively adds to the vintage tone, but sometimes it feels like it does . The bridge needs to be glued on before attaching the bridge doctor, since the bridge needs to be in place for the bridge doctor to function correctly. Steam heat the top and press it to the desired shape (flat), put new braces on, reglue the top to the body, bind it and finally put any finish on it. I don´t think this is worth the guitar.
